Mozaic Restaurant Gastronomic Ubud is set to host Full Circle: Mozaic x ESA, a special collaboration between Chef Blake Thornley and Chef Aditya Muskita on April 12, 2025. This exclusive event will feature a six-course menu with two additional snacks, highlighting the chefs’ shared commitment to innovation and Indonesia’s rich culinary heritage.
Chef Blake, who leads Mozaic 2.0, has built a reputation for ingredient-driven fine dining, emphasizing sustainability and local produce. His experience in renowned kitchens such as Charlie Trotter’s (Chicago), The Square (London), and OHA Eatery (Shanghai) has helped Mozaic earn a spot at No. 25 on La Liste’s Top 1000 Restaurants for 2025 and recognition from Les Grandes Tables du Monde.
Chef Aditya Muskita, now the chef-owner of ESA in Jakarta, returns to Mozaic, where he previously honed his skills before working at Room4Dessert, Daniel Boulud’s Singapore outpost, and Copenhagen’s Relæ. Known for his modern approach to Indonesian cuisine, he brings a bold and boundary-pushing perspective to the collaboration.
The event will take place at The Dining Room at Mozaic, with the tasting menu priced at IDR 1,600,000++ per person. This reunion of two celebrated chefs offers a rare opportunity to experience their evolving culinary philosophies in a single evening.
