Today, Seoul became a hub of culinary exchange as S.Pellegrino, in anticipation of the SPYCA 2024-25 Grand Finale, convened a unique gathering at Jungsik Seoul. This event, “Bring Your Future to the Table,” was designed to be more than a preview; it was a platform for mentorship, collaboration, and strategic discussion about the future of Asian gastronomy.

The event focused on connecting the current SPYCA regional winner, Ardy Ferguson, with established chefs who’ve served as judges and mentors, creating a powerful network. Hosted at Jungsik Seoul, a Michelin-starred restaurant run by SPYCA alumnus Chef Jungsik Yim, the event featured a curated luncheon and a panel exploring “Asia: Transforming into a Culinary Hub of the Future.” The discussion centered on the evolving landscape of fine dining, the challenges and opportunities in the Asian culinary market, and the transformative power of the SPYCA experience.

A significant aspect of the event was the collaborative multi-course meal, where ten chefs contributed their expertise, creating a unique dining experience. This showcased the spirit of collaboration that S.Pellegrino aims to foster. The meal highlighted regional finalists and culminated in a signature dessert from Jungsik Yim, demonstrating the diverse talent within the competition. The course begin with two rounds of amuse-bouche by senior chefs, the first course crafted by William Yee, the second course prepared by Korea’s Jaeho Kim, main course powered by Ardy Ferguson, and a signature dessert by host chef and SPYCA Juror alumni Jungsik Yim.

Chefs Richie Lin and LG Han highlighted the importance of mentorship and international exposure in developing young chefs, emphasizing the SPYCA’s role in creating a global network. Ardy Ferguson expressed his gratitude for the support he received, highlighting the collaborative environment and his excitement to represent Asia in Milan. Roberto Caroni, from S.Pellegrino, reiterated the company’s commitment to nurturing young talent, emphasizing the SPYCA’s role in providing opportunities for growth and connection. This Seoul summit served as a crucial step in preparing the next generation of culinary leaders, fostering a community that will shape the future of Asian cuisine.
