A restaurant known for its ingredient-driven philosophy in Ubud is temporarily relocating its kitchen to Jakarta. Syrco BASÈ has launched a three-week culinary pop-up at Altitude Grill Jakarta, located on the 46th floor of The Plaza. Running from 16 February to 7 March 2026, the collaboration introduces the restaurant’s Bali-rooted tasting menu to the capital for a limited engagement.
Founded in Ubud in January 2024 by two Michelin-starred chef Syrco Bakker, Syrco BASÈ is built around three guiding principles: Traceability, Nature, and Transparency. The Jakarta pop-up adapts that framework to an urban setting while maintaining its focus on Indonesian produce and supplier relationships.

In a very different environment to our home in Bali, we invite guests to experience Indonesian ingredients and flavors through our approach of traceability, nature, and transparency. Every dish contains layered stories of origin, our collaborations with farmers and suppliers, and our respect for the land.”
Signature Dishes and New Creations
The menu combines established dishes from the Ubud restaurant with new compositions developed through ongoing research across the Indonesian archipelago. Signature plates include:
Steak Tartar with rendang seasoning, blending European technique with Indonesian spice profiles
Taro Rösti with Duck Betutu, combining Balinese seasoning with a structured Western format
Spiny Lobster preparations, highlighting premium Indonesian seafood
Pure Chocolate with soursop and avocado, a dessert balancing tropical fruit and cacao
Alongside these dishes, new creations introduce techniques and flavour pairings developed through continued collaborations with farmers, fishers, and artisans.

A Full Experience priced at IDR 2,900,000++ includes the Journey Menu, Champagne, cocktail and wine pairing, water, an after-dinner cocktail, and coffee or tea.
The beverage programme highlights Indonesian producers, incorporating spirits and artisanal labels such as Three Peaks, Black Rock, Nusa Caña, Yellow Sky, and SABA Grappa into cocktail and pairing selections.
Transformed Dining Space
For the duration of the pop-up, Altitude Grill’s interior has been redesigned to reflect the atmosphere of Syrco BASÈ in Ubud, incorporating natural textures and layered design elements intended to mirror the restaurant’s culinary philosophy.
Dinner service runs daily from 5:00 PM to 10:00 PM, with lunch available from 12:00 PM to 2:00 PM upon request.
The Jakarta engagement marks a temporary extension of Syrco BASÈ’s Bali-based concept, bringing its ingredient-led tasting menu and collaborative sourcing approach into a skyline setting for a limited period.
