W Bali – Seminyak is set to host a one-day culinary collaboration with Sensorium Bali on Sunday, 15 June 2025, offering a brunch experience that merges flavor, memory, and artistic expression. Taking place at Starfish Bloo from 12 PM to 3:30 PM, the Sensorium Brunch Takeover introduces a multi-sensory dining format shaped by the philosophy of Chef William Salim, the founder and chef of Sensorium in Canggu.
Known for its modern approach to Australasian cuisine—melding Australian technique with nostalgic Asian flavors—Sensorium has gained a following for its introspective take on brunch. This collaboration brings that ethos to the beachfront setting of W Bali – Seminyak, transforming a typical Sunday brunch into a curated experience of taste, scent, texture, sight, and sound.
Chef William, originally from Medan, developed his culinary foundation in Australia, spending over a decade in professional kitchens and hospitality schools. His approach, deeply rooted in emotional connection and culinary storytelling, is reflected in each dish.
The brunch menu highlights Sensorium’s signature style with dishes such as the Bulgogi Beef Burger, served with pickled vegetables, chili mayo, and Asian slaw on a brioche bun, and the Prawn Pasta, combining cherry tomatoes, edamame, and prawn butter. Other standouts include the Textural of Mushroom, a layered dish with dark rye bread, umami mushrooms, egg, fried shallots, and seaweed paste, and the Miso Pancake, a dessert topped with fresh berries, citrus cream, and vanilla ice cream.
Set against the ocean-facing backdrop of Starfish Bloo, the brunch will also feature live entertainment and curated DJ sets. Guests can expect a lively yet refined atmosphere, designed to complement the imaginative culinary lineup.
