Canggu’s vibrant culinary scene welcomes a new addition with the opening of Sazón Tapas Bar & Grill. Located along the bustling Batu Bolong, Sazón offers more than just a restaurant experience—it introduces a dynamic celebration of Spanish social dining. Combining bold flavors, expertly crafted cocktails, and a warm, convivial atmosphere, the venue is an independent hotspot operating under Regent Bali Canggu.

Blending high-quality Spanish ingredients with the freshest local produce, Sazón presents a thoughtfully curated menu designed to deliver an authentic taste of Spain. The restaurant, designed to accommodate up to 133 guests, features an open kitchen, cozy booths, alfresco garden seating, and a vibrant bar. Contemporary interiors, warm wooden finishes, and a lush terrace contribute to an inviting, stylish setting, while an exclusive Chef’s Table offers an immersive view into the kitchen’s craftsmanship.

Sazón’s culinary vision is led by award-winning chef Andrew Walsh, whose previous restaurant, Cure in Singapore, received a Michelin Star in 2021 and a place on The World’s 50 Best Discovery List. Walsh aims to recreate the lively spirit of Spanish communal dining in Bali.

“Sazón is an experience of high energy and vibrancy rooted in the Spanish philosophy of gathering around the table,” said Walsh. “Spanish cuisine naturally embodies the sharing style of dining, from tapas to communal meals, and that is the experience we aim to offer.”

Head Chef Javier Vicente brings additional expertise to Sazón’s kitchen. With a career that includes participation in the World Championship of Paella Valenciana and co-ownership of the London Paella School, Vicente draws on his experience in Spain and Singapore to deliver an authentic yet innovative menu.

The offerings at Sazón pay tribute to classic Spanish flavors while incorporating local elements. Signature dishes include the Spanish Tortilla with Potato & Onion Jam and Chorizo Tomato, Scallop with Ajoblanco Chilled Almond Soup, Cucumber & Dill, and Paella with Iberico Pork, Mushroom Sofrito, Aioli, and Kale. The Parrilla grill selections feature standout dishes such as the 28-Day Dry-Aged Beef ‘Txuleta’ (1 Kg) served with confit garlic. Desserts include options like the ‘Carajillo’ with Coffee & Whisky and Burnt Milk Ice Cream.

The beverage program complements the menu with curated wines, craft cocktails, and house-infused spirits. Highlights include Sangria Roja made with rosemary-infused port and rosella cordial, Sangria Blanca featuring sakura tea-infused white wine, and the Aperitivo de Marianito, a blend of strawberry tea-infused gin, Limo Aperitivo, sweet vermouth, and bitters.

Sazón’s design, a collaboration between Walsh and architect Nick Derickx of Studio Derickx, integrates Spanish energy with Balinese craftsmanship. The space features volcanic stone, artisanal ceramics, and timber accents, with a handcrafted timber screen that provides shade during the day and becomes a glowing landmark by night. An open kitchen anchored by sculptural stone tables and a lush courtyard bar further enhance the immersive dining experience.

Sazón is open Wednesday through Sunday from 6 PM to 11 PM, welcoming guests to enjoy authentic Spanish flavors, communal ambiance, and warm hospitality in the heart of Canggu.
