This independent hotspot, under the umbrella of Regent Bali Canggu, combines bold flavors, expertly crafted cocktails, and a convivial atmosphere, offering an authentic taste of Spain in the heart of Bali.

Led by award-winning Chef Andrew Walsh, whose Michelin-starred restaurant Cure in Singapore earned global acclaim, Sazón delivers a culinary experience that resonates with food lovers. Walsh’s vision for Sazón is rooted in the Spanish philosophy of communal dining, where sharing plates and vibrant meals bring people together. “Sazón is about high energy and vibrancy, embracing the joy of gathering around the table,” says Walsh.

 

Bringing this vision to life is Head Chef Javier Vicente, a seasoned expert in Spanish gastronomy with accolades from the World Championship of Paella Valenciana and co-ownership of the London Paella School. His expertise ensures that Sazón’s menu honors Spain’s finest ingredients while incorporating fresh local produce. Signature dishes include the Spanish Tortilla with Potato & Onion JamScallop with Ajoblanco Chilled Almond Soup, and the show-stopping Paella with Iberico Pork & Mushrooms. For meat lovers, the 28-Day Dry-Aged Beef ‘Txuleta’ (1 Kg) from the Parrilla grill is a must-try. Desserts like the ‘Carajillo’ with Coffee & Whisky and Burnt Milk Ice Cream provide a sweet conclusion to the meal.

 

The beverage program is equally impressive, featuring curated wines, craft cocktails, and house-infused spirits. Standouts include the Sangria Roja, a bold blend of red wine and rosemary-infused port, and the Sangria Blanca, featuring sakura tea-infused white wine and lychee. The Aperitivo de Marianito, a refined mix of strawberry tea-infused gin and sweet vermouth, adds a sophisticated touch.

 

Designed by architect Nick Derickx of Studio Derickx, Sazón’s space seamlessly blends Spanish energy with Balinese craftsmanship. The restaurant features an open kitchen, cozy booths, alfresco garden seating, and a central bar, all crafted with locally sourced materials like volcanic stone, artisanal ceramics, and timber. A handcrafted timber screen provides shade by day and transforms into a glowing landmark at night, creating a warm and immersive dining experience.

Open Wednesday to Sunday from 6 PM to 11 PM, Sazón invites guests to savor authentic Spanish flavors in a lively, welcoming setting.
