The menu moves across regions, beginning with Rendang Beef Cheek from Padang, slow‑cooked until tender in aromatic spices. From Ternate comes Tuna Gohu, fresh tuna belly dressed with coconut oil and citrus, while Gorontalo is represented by Sop Binte Biluhuta, a sweet corn soup with shrimp and basil. Aceh’s bold flavors appear in Udang Tangkap, crispy prawns fried with curry leaves, while East Java offers two specialties: Pepes Shisamo with Black Spices, grilled in banana leaves, and Rawon Pipi Sapi, beef cheek braised in a rich keluak broth. Surabaya’s Red Fried Rice adds a vibrant touch, and Purwakarta’s Wagyu Maranggi Satay brings skewers marinated in traditional spices. To close the meal, desserts such as Jongkong, a pandan‑based sweet with palm sugar syrup, and Surabi Pandan Durian, a pancake paired with durian sauce and coconut ice cream, highlight the comfort of Javanese sweets.

Beyond Jejak Rasa, Noesaka Plaza Indonesia continues to serve its own range of Indonesian favorites. Dishes such as Batagor and Siomay made with mackerel fish, Palembang’s pempek, Bogor’s soto mie, and Pontianak‑style meatballs highlight the diversity of flavors that define the country’s food culture.
