Oliverra, the Mediterranean restaurant at Umana Bali, is starting a new dinner series called Mixology Collective. The idea is to bring chefs and bartenders together to create meals where food and drinks are designed to work side by side. The first event will be held on Friday, 7 November 2025, at 6 pm.

For this opening edition, Oliverra is teaming up with Taketo Utsunomiya, the bartender behind NOTTE Uluwatu’s drink program. He joins Executive Chef Ngurah Putra to present a six-course dinner where each dish is paired with a cocktail made to match its flavor and mood. Chef Ngurah explains that the series is about finding a rhythm between the kitchen and the bar. He says the goal is to create a dining experience where the food and drinks move together, offering new ways to enjoy familiar ingredients.

The evening starts with a Verde Gin Tonic, followed by a series of dishes and drinks served in sequence. One course includes oysters paired with a NIKKA Coffey Gin martini. Another features scallops matched with a cocktail made from passionfruit, yuzu, and bamboo, finished with a touch of wasabi salt. There’s also ravioli served with a highball made from Aperol and vermouth, and coffee-smoked beef cheeks paired with a smoky KOCH mezcal and Bali’s LIMO liqueur. The dinner ends with a whiskey and Earl Grey Tea Cocktail, chosen for its soft and fragrant finish.

Each pairing is meant to show how cocktails can do more than accompany a meal—they can reflect the dish, add contrast, or bring out new flavors. “Pairing cocktails with a tasting menu is like creating music where each course is a note, and the drinks are the rhythm,” says Taketo Utsunomiya. “I wanted to craft cocktails that don’t just accompany the dishes but reveal new layers of flavor, making the journey more memorable.”

Mixology Collective is planned as a series, with future events expected to feature other chefs and bartenders from Bali and beyond. The focus remains on collaboration, with each dinner offering a different way to explore the connection between food and drink.
