Mandapa, a Ritz-Carlton Reserve in Ubud is introducing a series of Easter dining experiences on 4–5 April 2026, centring on two distinct food programs: a degustation dinner at Kubu Restaurant and an Easter Sunday brunch at Sawah Terrace.
The culinary program places a strong emphasis on locally sourced ingredients and seasonal produce, with menus shaped by Bali’s diverse landscapes—from coastal waters to volcanic highlands.
Nine-Course Degustation by the Ayung River
The Easter dinner takes place at Kubu Restaurant, where a nine-course degustation menu curated by Chef Eka highlights ingredients foraged within a 100-kilometre radius. The menu draws from Bali’s natural surroundings, incorporating produce grown in volcanic soil alongside seafood sourced from nearby waters.
Each course reflects a different aspect of the island’s terrain, translating these elements into refined compositions that balance flavour, texture, and presentation. The dinner is complemented by a curated wine pairing from Vidal-Fleury, designed to follow the progression of the menu.
Served in the restaurant’s riverside setting, the experience is scheduled in two seatings at 5:30 PM and 8:30 PM.
Easter Sunday Brunch at Sawah Terrace
The following day, the focus shifts to a more expansive format with the Easter Sunday brunch at Sawah Terrace Restaurant, overlooking the Ayung River and surrounding greenery.
The brunch presents a wide-ranging spread that combines international selections with Indonesian dishes. Offerings include grilled seafood, freshly prepared salads, pastries, and local specialities, alongside tropical fruits that reflect the season. The menu is designed to move between lighter preparations and more substantial dishes, allowing guests to explore different flavours across the meal.
The brunch is served from 12:30 PM to 3:00 PM.
A Food-Led Easter Program
While the broader Easter program at Mandapa includes outdoor activities and wellness experiences, the dining component remains central, with both Kubu and Sawah Terrace presenting menus that highlight ingredient-driven cooking and regional influences.
The combination of a structured degustation dinner and a more relaxed brunch format offers two contrasting approaches to the same theme—seasonality, locality, and the connection between landscape and cuisine.
