Ahead of the 2025 edition of Asia’s 50 Best Bars, a series of collaborative dining events will take place in Macau from 12 to 13 July 2025. Known as the 50 Best Signature Sessions, the program will bring together top bartenders from international bars and chefs from Wynn Resorts Macau for the first time. The sessions are part of the lead-up to the main event on 15 July 2025, when this year’s bar rankings will be revealed. For two days, you can experience unique pairings between food and drink, with chefs and mixologists working together to design menus that reflect both culinary styles and personal influences.
The first collaboration, happening on 12 July 2025, will take place at Drunken Fish, a restaurant at Wynn Macau that focuses on seafood prepared with Chinese influences. Executive Chef Henry Zhang will work with Maybe Sammy, a well-known bar from Sydney recognized for its colorful style and playful approach to cocktails. Bartenders Hunter Gregory and Paolo Maffietti will present original drinks designed to pair with Chef Zhang’s dishes, using flavors that highlight the contrast between bold ingredients and vibrant presentation.
On Sunday, 13 July 2025, at lunchtime, Sushi Mizumi at Wynn Palace will host the second session. Known for its traditional Japanese setting and limited seating, the restaurant will welcome Martiny’s, a New York bar run by Takuma Watanabe. The bar blends classic New York cocktail culture with Japanese techniques. For this session, Watanabe will create drinks that complement the tasting menu prepared by Executive Chef Hironori Maeda. The experience is meant to reflect attention to detail and balance, with both food and drink showcasing traditional elements in a refined setting.
