Fairmont Singapore has reopened ANTI:DOTE, introducing a new chapter shaped by Head Bartender Eduardo Zamora and Bar Manager Carla Davina. Both bring wide global experience and a thoughtful approach to the way guests are welcomed and served. Eduardo, who first trained at the original ANTI:DOTE, blends storytelling into cocktails, drawing inspiration from Southeast Asian ingredients and traditions. Carla adds a personal touch to operations, shaped by years at well-known bars in London and Singapore, and helps set a warm tone across the entire team.
Cocktails with Characters
At the centre of the bar’s revival is the new drink menu, called CURE:ALL. It’s made up of ten cocktails grouped by how people feel. Confident: Discover, Indulge: Empowered, and Reset: Recharged. Each drink combines different textures, colours and aromas to match the guest’s emotional state.
Confident: Discover includes Curious Chameleon that surprises with shifting colours while Pretty Please blends floral and fruity tones with sakura and peach lychee for a soft glow. Shimmer & Shine dazzles with dark rum, umeshu, port wine and homemade pearl liqueur. Indulge: Empowered has Main Character Energy that commands attention with rye whiskey, vermouth, berry liqueur and frozen grapes, while Pure Indulgence pairs tequila, mezcal and sherry with blood orange gentian liqueur for rich depth. Throwback to the Days taps into nostalgia with peanut butter–washed vodka, bourbon and almond sweetness. For Reset: Recharged, Fatigue Fix freshens with cucumber, strawberry and edible air, Bright Reset brings citrus and herbal lift on edible rice paper, Burnout Brew soothes with Sakura Tea Gin, honey and Aperol jelly, and Guilty Not Guilty comforts with chocolate, mint and tequila dusted with cocoa—all crafted to match a mood and served with intention.
The food at ANTI:DOTE pairs naturally with these cocktails. Small plates are designed for sharing, inspired by Spanish-style bar snacks but with a global twist. Guests can start with green and black olives marinated in citrus, crystal-clear tomato bread topped with jamón, or salted cod churros served with romesco. Richer dishes include pork and foie gras sliders, spiced fried chicken, grilled sandwiches with ham and truffle, and a signature potato omelet made with confit potatoes, garlic aioli and chorizo. For heartier options, there’s grilled pork secreto with padrón peppers and juicy carabinero prawns in garlic butter. Dessert choices range from doughnuts filled with crème catalana to creamy Basque cheesecake and classic cheese selections. Every dish is shaped around flavours that complement the cocktails and encourage conversation.
Design and Rhythm That Match the Menu
While the drinks and dishes take centre stage, the design and music at ANTI:DOTE complete the experience. Sound plays a key role in setting the mood, with curated jazz sessions, vinyl DJ sets and live performances throughout the week. Each event brings a unique feel, supported by one-night-only menus that reflect the rhythm of the music.
Designed by PARKS, the space blends deep colours, soft lighting and smooth curves. The Bar and The Lounge are connected by marble, wood and layered textures, creating a natural flow through the venue. The main chandelier, once traditional, has been reshaped into a softer, more sculptural piece. The Bar invites energy, with a bold counter, plush seats and a dance floor that shifts with the evening’s pace. The Lounge offers a quiet setting for private events, afternoon tea or live music, surrounded by art curated by Ode to Art.
