Swedish chef Björn Frantzén has reached a rare milestone in the global culinary landscape, with his Dubai restaurant FZN receiving three Michelin stars in the 2025 Michelin Guide, announced during the official ceremony in Dubai. With this recognition, the Frantzén Group now operates three restaurants that each hold Michelin’s highest accolade — in Stockholm, Singapore, and Dubai.
The achievement places Frantzén among a very small group of chefs and restaurant groups operating multiple three-star venues worldwide. FZN’s inclusion also marks the first time a restaurant in the UAE has been awarded three Michelin stars, underscoring the country’s growing recognition in the fine dining world.

The three establishments under the Frantzén Group each reflect a distinctive culinary direction grounded in Nordic philosophy and adapted to their respective regions:
Frantzén – Stockholm, Sweden
Opened in 2017, Frantzén became the first restaurant in Sweden to receive three Michelin stars in 2018. The flagship is known for combining Scandinavian ingredients with global techniques, offering a progression-based tasting menu featuring dishes such as raw scallop with finger lime and brown butter, or slow-cooked pork with fermented apple.
Zén – Singapore
Launched in 2018, Zén earned its third star in 2021. Located in a heritage building on Bukit Pasoh Road, the restaurant presents Nordic sensibilities layered with Southeast Asian and Japanese flavors. Past menus have included creations like king crab with beurre blanc and sudachi, or uni chawanmushi with sea buckthorn.
FZN – Dubai, UAE
FZN opened in October 2024 at ICD Brookfield Place and achieved its three-star rating within just months. The kitchen’s approach is rooted in Nordic precision but tailored to its Middle Eastern setting. Dishes often incorporate regional ingredients and flavors, such as wagyu beef with date molasses and black truffle, or roasted langoustine served with spiced labneh.
With just 152 restaurants worldwide currently holding three stars, this expansion places the Frantzén Group in a leading position among global fine dining establishments. It reflects not only the group’s culinary consistency but also its ability to translate a unified vision across continents while embracing regional influence.
