Akira Back at The Henderson will present Palette to Palate: The Art Series at Akira Back on 27 and 28 March 2026, a menu created to coincide with Hong Kong’s Art Month. For these two evenings, Chef Akira Back will personally lead the kitchen, shaping a five‑course tasting experience that blends Japanese foundations with global influences.

The evening opens with Hassun (AB Trio Bites), a set of three small plates. Wagyu steak tartare comes with quail egg yolk and nashi pear, AB Garden Pizza layers truffle with vegetables and mushrooms, and tuna belly is finished with shoyu and ikura. Together, they form a refined introduction to the menu.

Steamed Butter Fish follows, arranged with braised radish and lotus root ponzu. The dish highlights clarity and balance, with acidity providing a gentle lift. Roasted Quail then takes the spotlight, its crisp skin and tender meat paired with gochujang mole, smoked cucumber, and a rich quail jus.

The centerpiece is Snow Crab Clay Pot Rice, presented in its shell. The sweetness of crab is combined with fermentation notes inspired by Korean traditions, accompanied by clear gam‑tae soup and banchan that refresh the palate between bites.

The finale is AB Cigar, a dessert shaped like a rolled cigar and dusted with sesame “ash.” Inside, smoked coffee mousse and strawberry jelly create a layered finish that balances richness with brightness, closing the evening with a playful nod to the art theme.

With its focus on artistry and flavor, Palette to Palate offers a dining experience that reflects the creative energy of Hong Kong’s Art Week, bringing together culinary craft and cultural celebration in a way that feels both fitting and unique.
