Seasalt at Alila Seminyak is marking its ninth anniversary with a two-day culinary collaboration alongside Alila Villas Uluwatu, bringing together chefs, coastal-inspired dishes, and live grill experiences on 16 and 17 May 2026. The programme highlights the shared culinary philosophy between the two Alila destinations, centred on locally sourced ingredients, charcoal grilling, and Indonesian flavours.
Over the years, Seasalt has become known for its ingredient-driven cooking and seafood-focused menu, often incorporating traditional Kusamba sea salt from East Bali into its dishes. For the anniversary collaboration, Executive Chef Kadek Sugiantara of Alila Villas Uluwatu joins Seasalt’s Chef Hazwan Hamdan to present a menu combining grilled seafood, Indonesian spices, and sharing-style plates inspired by Bali’s coastal dining culture.
Grilled Seafood and Indonesian Flavours Take Centre Stage
The celebration begins on 16 May with a sunset dining programme running from 5 PM to 10 PM, featuring a special à la carte menu from Alila Villas Uluwatu. The dishes focus heavily on grilled proteins and bold Indonesian seasonings.
Among the highlights is satay campur, combining chicken satay, satay lilit ikan, Wagyu M3 beef satay, and pork belly skewers served with peanut sauce and various sambals. Seafood-focused dishes include ikan bakar dabu dabu, a grilled catch of the day paired with Manadonese chili salsa, while meat dishes extend to iga bakar babi kecap, chargrilled pork ribs served alongside curried cassava leaves and Chef Kadek’s signature sambal setan.
Dessert concludes with puding kelapa, an Indonesian-style coconut caramel flan paired with rum and raisin ice cream. Guests may also order from Seasalt’s regular à la carte menu throughout the evening.
Coastal Brunch with Live Grill Stations
The anniversary continues on 17 May with Seasalt’s Coastal Brunch from 12 PM to 4 PM, incorporating live grill stations and dishes from Alila Villas Uluwatu’s signature menu.
The brunch line-up includes fresh seafood on ice, dry-aged sashimi, seafood maki rolls, Wagyu short rib with Kalimantan black pepper, laksa with octopus and vermicelli, and baked oysters. The experience also features a live grilling station centred on a Whole Grilled Seabass Dabu Dabu, alongside Indonesian and Asian-inspired salads and side dishes.
Accompanied by live entertainment from Lamented Laughter, the brunch reflects the relaxed, open-air dining style that has shaped Seasalt since its opening in Seminyak. The brunch is priced at IDR 650,000++ per person.

Through the collaboration, Seasalt continues to highlight its focus on coastal dining, seafood, and Indonesian flavours while bringing together two culinary identities under the Alila brand.
