SKAI Bar & Grill will present Mixology Takeover Vol. 3 on 23 May 2026, featuring bartender Deva Diantara from SKOOL Kitchen for a one-night cocktail collaboration in Legian. The event will run from 6 PM to 10 PM, bringing a menu of cocktails built around shrub techniques and locally inspired ingredients.
Known for its bar programme and relaxed dining atmosphere, SKOOL Kitchen recently entered Tatler’s Best 20 Restaurants in Indonesia. For the collaboration, Deva introduces a cocktail line-up focused on balancing fruit, sugar, and vinegar through the shrub technique, traditionally used to create layered and refreshing drinks.
One of the ingredients highlighted during the event is mengkudu (noni), an Indonesian fruit recognised for its naturally bitter profile. Through the cocktail programme, the ingredient is reworked into drinks designed to be lighter and more approachable while maintaining its distinct flavour characteristics.
Among the featured cocktails is Tomat, Deva’s reinterpretation of the Bloody Mary. The drink maintains the savoury tomato profile of the original while reducing much of its heaviness and colour, resulting in a lighter version intended for easier drinking.
The cocktails are paired with a selection of dishes from SKAI Bar & Grill, including Smoked Beef Patty, Wood-Fired Chicken, and Grilled Halloumi, continuing the venue’s focus on grilled and beachfront dining formats.
“I want people to walk into SKAI and instantly feel comfortable, like they’re home, surrounded by good food, good drinks, and good people,” said Deva.
Held at SKAI Bar & Grill in Padma Resort Legian, the event forms part of the venue’s ongoing mixology series, bringing guest bartenders and collaborative beverage programmes into its coastal dining setting.
