Waldorf Astoria’s upcoming resort in Bali will highlight its strong culinary positioning with a line-up of elevated food and beverage experiences. Central to this is the appointment of award-winning chef Dave Pynt, who will helm The Ledge by Dave Pynt, the resort’s signature restaurant. Known for his expertise in open-fire cooking and bold, refined flavors, Pynt brings his barbecue-driven concept—already beloved at Waldorf Astoria Maldives Ithaafushi—to the cliffs of Nusa Dua.

Waldorf Astoria has long positioned itself as a platform for celebrated culinary talent. From chef Michael Anthony at Lex Yard and mixologist Jeff Bell at Peacock Alley in New York, to upcoming collaborations with Clare Smyth and Daniel Boulud in London, the brand continues to forge strong global culinary partnerships. In Asia, this includes Michelin-starred restaurants in Shanghai, Beijing, and Xiamen, all of which combine place, heritage, and innovation.

In addition to The Ledge by Dave Pynt, the resort is expected to feature a curated mix of F&B outlets, a beach club, and destination-led dining experiences that reflect Waldorf Astoria’s global culinary legacy while drawing on Bali’s local flavours and traditions.

Waldorf Astoria Bali to Open in Late 2027

Set within the prestigious coastal enclave of Nusa Dua, Waldorf Astoria Bali is scheduled to open in late 2027. The property will offer 71 expansive villas and 68 sophisticated guest suites, bringing Waldorf Astoria’s hallmark blend of grandeur and modern luxury to the island. Designed as a serene oceanside retreat, the resort will pair world-class architecture and anticipatory service with wellness programming and immersive cultural experiences.

The signing of Waldorf Astoria Bali follows Hilton’s broader expansion across the luxury and lifestyle sector, with the company surpassing 1,000 properties globally and an additional 500 in development. Across Asia Pacific, the Waldorf Astoria brand is set to more than double its footprint in the next two years.

Following recent openings in Osaka and the Seychelles, the brand will launch properties in Shanghai Qiantan, Kuala Lumpur, Sydney, Tokyo, Xi’an, Jaipur, and Hanoi. Hilton’s other luxury brands, including Conrad Hotels & Resorts, LXR Hotels & Resorts, and the soon-to-debut NoMad Hotels in Singapore, will further strengthen the group’s presence across key travel destinations in the region.
