Meat and Livestock Australia (MLA), in collaboration with the Victoria Government, is introducing Fiesta del Cordero, a month-long culinary event dedicated to Australian lamb and Latin flavors. The festival runs until 27 June 2025 and features a special menu created by Chef Victor Taborda of Sudestada and Chef Silverio Martinez of CasaLeña.

As part of the Lambassador 2025 initiative, the chefs have developed dishes that blend traditional Latin American cooking with Australian lamb. Some of the signature items include Lamb Barbacoa Tacos, prepared in a PIB oven and served with handmade tortillas, cilantro, onion, and salsa verde; Lamb Pide, a pizza-style bread topped with spiced lamb; and Lamb Penne Pasta, accompanied by a creamy butter garlic sauce and lamb meatballs. Other highlights include Lamb Consomé, a dish featuring chickpeas and dried chili adobo, Lamb Skewers, served with grilled eggplant and yogurt sauce, and Lamb Parrillada, a platter with lamb chops, Merguez sausage, and skewers.

The event emphasizes the adaptability of Australian lamb and how it complements Latin cooking techniques. Both chefs incorporate their cultural influences, mixing Argentine and Mexican elements with Australian produce to create bold and flavorful meals. Christian Haryanto, Chief Representative of MLA Indonesia, explained that Fiesta del Cordero showcases Australian lamb’s ability to connect different culinary traditions. He noted that the Lambassador program encourages chefs to explore the ingredient’s versatility in new ways.

Naïla Mazzucco, Commissioner for Victoria to Southeast Asia, shared that Victoria produces some of Australia’s finest lamb, appreciated for its quality and ability to enhance international cuisines. She highlighted the importance of strengthening culinary exchanges between Australia and Indonesia through collaborations like this. Chef Victor Taborda praised Australian lamb for its rich taste and tenderness, describing it as ideal for Latin recipes. Chef Silverio Martinez added that the event allows them to merge tradition with creativity, introducing new ways to enjoy lamb.

Fiesta del Cordero is part of MLA’s global efforts to promote Australian lamb and encourage its use in different culinary traditions. The Lambassador program helps chefs gain insight into Australian farming practices, bringing inspiration to their kitchens.
