The Unraveling Indonesia lunch and dinner ala carte menu features new dishes such as Bumbu Rujak Donut, Soto Sumsum, Whole Barramundi in Andaliman Sauce, Asam Padeh Bowl and Sizzling Plate Balado Flavor-aged Kiwami Wagyu Sirloin and Harvey Black Label Wet Aged Sirloin.
Ala carte diners will also get to enjoy the PA.SO.LA cemilan Platter – a selection of daily-changing Indonesian snacks which pique the appetite in preparation for the meal to come. Guests who choose to take the lunch buffet can enjoy the Buntut Station with four different oxtail preparations, Indonesian Carving Station with such favorites as Ikan Bakar Bumbu Rujak, Sei-style Smoked Peppered Beef Brisket and Ayam Rica-Rica; and the Sambal and Kerupuk trolley where fresh
sambals are prepared table-side.
To complement the new menu, PA.SO.LA’s team of bartenders has also come together to design a new cocktail menu. Cocktail Archipelago is a selection of classic cocktails with modern twists, made using the wealth of ingredients from all around Indonesia. From Sabang to Marauke, the bar team has picked these exotic ingredients to add complexity to the drinks, revealing elegant cocktails with depth of flavor and interesting aromas. Some of the favorites include: Andali-Man – which is made with reposado tequila, Andaliman pepper infused vermouth, elderflower syrup and lemon zest; and The
Pelawan – composed of Pelawan Mushroom infused rye whisky, sweet vermouth, maraschino liqueur, Angostura bitters and topped off with an edible bubble filled with smoke from the Flavour Blaster.
