Unilever Food Solutions (UFS) hosted the Future Menus 2025 event in Bangkok, gathering over 330 chefs, restaurateurs, and food industry professionals from across Southeast Asia to discuss emerging trends in the region’s evolving dining landscape.

Held under the theme “Unleash the Taste of Asia,” the event featured panel discussions, interactive showcases, and cooking demonstrations that explored how tradition, innovation, and consumer behavior are shaping the future of food service.

The program focused on four key culinary trends:

  • Street Food Couture elevated everyday street flavors into premium dishes, with examples including Spicy Fermented Salmon Salad in Pani Puri Shells from Thailand and Small Crab Sticky Rice from Vietnam.

  • Culinary Roots celebrated regional heritage dishes such as Indonesia’s Arsik Ikan and Malaysia’s Nasi Lemak, highlighting the enduring appeal of traditional cooking.

  • Borderless Cuisine embraced global fusion, with offerings like Beef Pares Style Tacos from the Philippines and Green Peppercorn “Tigermilk” from Singapore, showcasing how international influences are being localized.

  • Diner Designed highlighted growing demand for personalization in dining, focusing on customized experiences rather than fixed menu items.

Beyond food innovation, the event emphasized the role of data in restaurant operations. Speakers included Krittikul Chumkaew of After Yum and Rungsun Promprasith of QueQ Thailand, who shared insights on how data analytics can improve efficiency and enhance guest experiences.

The event concluded with a four-course dinner led by Chef Pichaya “Pam” Soontornyanakij in collaboration with the UFS culinary team, with each dish inspired by the day’s trend themes.

Kulnipa Lertpimonchai, Managing Director of UFS Southeast Asia Mainland, described the event as a platform for idea exchange and industry progress, while Angela Klute, Global Chief Marketing Officer of UFS, noted the increasing influence of Gen Z, the rising global appetite for Asian flavors, and growing interest in accessible luxury dining.
