Room4Dessert in Ubud has unveiled its latest tasting menu, Season 19: Fight Club—a 15-course multi-sensory experience that blurs the boundaries between sweet and savory, tradition and innovation. Created by Chef Will Goldfarb, the new chapter reaffirms the restaurant’s reputation for narrative-driven dining, sustainability, and playful experimentation.
Running through September 2025, the Fight Club menu features five savory snacks, five desserts, and five petit fours. Each dish is designed as part of an unfolding story—rooted in local ingredients, layered with global influences, and shaped by the kitchen’s ongoing dialogue with nature, memory, and technique.
The opening sequence features reinterpretations of regional dishes and bold new bites. A reimagined Lak Lak introduces a familiar Balinese flavor in an unfamiliar form. Tuna Yudi pairs fresh and cured tuna with a nira melon water “ponzu,” while Black Heart transforms a Roman artichoke into a deep, umami-rich expression. Prawn Praline layers local seafood with praline paste by Jordi Villa, and Duck Betel channels spiced, earthy flavors in tribute to Singapore’s Lower Amoy Street.
The second act transitions into desserts, but avoids typical sweetness. Canang Sando evokes ritual through coconut cake, tlengis cream, and mulberry. Jamu is deconstructed and sweetened, offering a gentle twist on the Indonesian herbal tonic. Raspberry HK brings contrast with black sesame gelato and crisp nougatine. Pandantone Perdu rethinks French toast through pandan-fried bread and passionfruit, while Coulant delivers a dark chocolate center accented with lime leaf sorbet and mushroom tuile—complex, layered, and deliberate.
The final five bites take a more whimsical, even surreal turn. Kakigori surprises with icy textures and hidden layers. /PDF/ delivers a Kedondong gummy experience coded in flavor. Mataharmesan uses grated coffee leaf for a quiet, aromatic moment. Rawon Marshmallow fuses campfire nostalgia with Indonesian spice, and Fries // Shake closes with a nod to childhood curiosity—blurring sweet, savory, and sentiment.
The full tasting menu is priced at IDR 1,090,000++ per person for the unpaired experience. Pairings are available in three options: Spiritless (IDR 1,290,000++), Spirited (IDR 1,540,000++), and Natural Wine (IDR 1,890,000++).
