He draws inspiration from Hong Kong’s layered identity—its flavors, pace, and people—and brings that into the glass. His cocktails often begin with a story, but they’re always designed to be enjoyed without pretense. Jonathan’s path to ARGO has been shaped by a career that spans continents and disciplines. He began in the kitchens of Michelin-starred restaurants in Paris, where he developed a sharp eye for detail and a deep respect for craft. But it was the bar that ultimately captured his imagination. The immediacy of guest interaction, the space for storytelling, and the balance between structure and spontaneity drew him in. Born in Lyon and now based in Hong Kong, Jonathan has worked in Geneva, Paris, and Miami, where he led the Champagne Bar at Four Seasons Hotel at The Surf Club. There, he helped shape a beverage identity that earned international recognition.
