Marina Bay Sands has unveiled its latest culinary destination, Jin Ting Wan, a contemporary Cantonese restaurant set on the 55th floor of Tower 1. Officially opened on 23 July 2025, Jin Ting Wan brings a new dimension to Chinese fine dining in Singapore, blending traditional Yue cuisine with artistic modernity.
The restaurant offers a multi-sensory journey into Cantonese gastronomy, led by Executive Chef Albert Li, whose two-decade career includes Michelin-starred kitchens such as Imperial Treasure Fine Chinese Cuisine in Shanghai. At Jin Ting Wan, Chef Li introduces an evolving menu that reflects the seasons and honors classic techniques like slow cooking, double boiling, and the meticulous craft of dim sum.
“Cantonese cuisine is not just my heritage, it’s my identity,” said Chef Li. “My mission is to change perceptions. I want guests to experience this cuisine not just through flavor, but through harmony, balance, and nuance. That is the true soul of Cantonese cooking.”
A Refine Culinary Vision
Jin Ting Wan celebrates the enduring elegance of Cantonese flavors with creative interpretations. One of the restaurant’s highlights is Roasted Duck with Black Pepper, served atop fragrant homemade pandan bread. Prepared using a traditional technique that splits the duck to resemble a Chinese pipa instrument, the dish is slow-roasted over lychee wood for a crisp golden skin and deeply layered aroma.
Other menu signatures include the Drunken Mantis Shrimp with Chinese Celtuce, inspired by Teochew-style cold marinades, and the Alaskan King Crab, prepared with precision and premium seasonal ingredients. The menu also draws influence from other Guangdong culinary styles, including Hakka, Teochew, and Shun De traditions.
Overseeing the guest experience is General Manager Rose Jiang, whose fine dining credentials include Michelin-starred Mansion Cuisine by Jingyan and Fu Chun Ju at The PuXuan Hotel in Beijing. With more than 15 years of experience, Jiang brings poise and precision to the service philosophy at Jin Ting Wan, ensuring each interaction reflects the highest standards of hospitality.
The restaurant seats 162 guests and features two private dining rooms for 10 guests each, along with two suite-style private rooms for 12 and 14 guests. These exclusive suites include personal service stations and dedicated staff. For a more immersive experience, guests may opt for the Chef’s Table—an eight-seat counter with curated dishes and a view into the kitchen’s inner workings.
A Tribute to Tea and Cultural Traditions
Beyond the cuisine, Jin Ting Wan offers a rich tea program curated by Head Tea Master Jacky (Zhao Gang). The collection includes more than 80 varieties across seven Chinese tea categories, served through a traditional Gong Fu tea ceremony. These rituals are hosted in the serene Art Room or offered during the dining experience, highlighting the poetic rhythm and philosophy behind Cantonese tea culture.
Complementing the tea offerings is a cocktail menu infused with tea-inspired creations, including non-alcoholic options. Guests can also explore a curated list of Chinese spirits, with a strong emphasis on Baijiu, reflecting the restaurant’s deep cultural ties.
The interiors of Jin Ting Wan combine ornate oriental elements with minimalist elegance. Silk textiles and intricate wood carvings accent the space, creating a warm yet contemporary setting. Each table is carefully arranged to allow privacy and intimacy, enhancing the sensory experience.
