At Santanera in Canggu, Christmas takes shape through a menu that highlights the joy of eating together. Chef Andrés Becerra, originally from Colombia, has designed a six-course experience that blends his heritage with years of work in Melbourne, where he became known for creating dishes meant for sharing.

The menu opens with Tuna Otoro served on patacón, the crisp plantain base that is a staple in Colombian cooking. A smoky bonito cream adds depth, bringing together crunch, silkiness, and a touch of umami. Seafood follows as the centerpiece of the meal. A saffron stew inspired by Colombia’s cazuela de mariscos brings a mix of fresh catches simmered in aromatic broth. Served over purple potatoes, the dish is both colorful and layered, offering warmth and subtle spice. Dessert is a tart of guava and strawberry, combining buttery pastry with bright fruit. It closes the menu with a balance of sweetness and tropical freshness. Guests with different dietary needs are also considered, with options available for gluten-free, vegan, and pescatarian preferences.

The setting adds to the occasion. Santanera’s three-level space in Canggu features an open kitchen, soft lighting, and intimate corners that create a relaxed yet festive atmosphere. Meals can unfold slowly, whether over lunch that stretches into the evening or dinner shared with family and friends. The Christmas menu will be served on December 24 and 25, offering a way to celebrate the season with flavors that carry both tradition and a sense of togetherness.
