Aqua Bar at Anantara Siam Bangkok Hotel is marking its 20th anniversary with the launch of a fully reimagined cocktail programme and refreshed identity. The update introduces a new structured menu concept, developed over two years, positioning the bar’s evolution around storytelling, technique, and seasonal flavour development.

Located within Parichart Court at Anantara Siam, Aqua Bar has long been positioned as a garden-facing cocktail destination in Bangkok’s Ratchaprasong district. The anniversary programme reframes the bar’s identity around “Quill the Duck,” a new emblem inspired by the ducks that once roamed the property’s ponds. While symbolic in nature, the character functions primarily as a narrative device anchoring the bar’s renewed focus on place-driven mixology.

The new drinks programme is led by mixologist Ryan Dela Vega, who has overseen the creative redevelopment since 2024. The concept moves away from a traditional cocktail list and instead structures the menu around eight distinct chapters referred to as “Potions of the Garden.” Each section reflects a different mood and time of day, progressing from lighter, fruit-forward profiles to deeper, spirit-driven expressions designed for late evening service.

The programme is executed by Aqua’s bartending team, known internally as “The Tinkers,” a group trained to operate under a shared technical and hospitality framework. Dela Vega, designated as Head Tinker, leads the team’s approach to layered flavour construction and precision execution.

Eight “Potions of the Garden”

The new menu is organised into eight signature cocktails:

  • Pomelo’s Embrace – Phraya Gold Rum with pomelo syrup, fresh lime juice, and coconut milk, finished with a savoury Esan sausage garnish that balances sweet and citrus notes.

  • Dew Drop Whisper – Roku Gin with elderflower liqueur, lime, and sparkling elements, presenting a light, floral profile.

  • Off the Duck’s Back – Botanist Gin infused with Palo Santo smoke, matcha, rosemary, and bergamot, topped with crispy duck skin for textural contrast.

  • Guava Lullaby – Campari and pink guava combined with amaro and tea, delivering a fruit-forward bitterness suited to early evening.

  • The Frog Prince’s Cup – Kakubin Whisky with Malibu, pineapple, cucumber, shio koji, and sesame oil, garnished with dried seaweed for a savoury finish.

  • Golden Lotus – The Macallan 12-Year Double Cask blended with riceberry, longan syrup, lime, and riceberry powder, offering a richer whisky-based expression.

  • Moonlit Butterflies – Butterfly pea-infused sloe gin with violet liqueur, cassis, jasmine rice syrup, lime, and sparkling wine, producing a layered floral structure.

  • Quill’s Midnight Spell – Altos Tequila and mezcal with coconut cream, pineapple, chipotle mayo, honey, and lime, finished with a spiced corn garnish.

The cocktails are designed to be experienced sequentially rather than individually, encouraging guests to move through the menu as a progression from lighter profiles toward bolder, more spirit-forward drinks.

Aqua Bar remains open daily from 12:00 PM to 12:30 AM, maintaining its established position as a garden-facing cocktail venue within the hotel while repositioning its beverage programme around narrative structure and contemporary mixology.

With the 20th anniversary relaunch, Aqua Bar shifts its focus toward a more conceptual cocktail format while retaining its identity as a long-standing Bangkok bar institution.
