Carbón, the latest breakthrough concept from MDA Restaurants has opened its doors.

Carbón offers Latin American-inspired dishes, prepared up close and personal over a live fire grill. Guests will be delighted as they experience a wide variety of flavors and fresh ingredients reminiscent of Mexico and Peru. Located in MD Place, at the heart of Jakarta, Carbón is the latest MDA lifestyle restaurant helmed by Chef Andri, MDA Restaurants’s Chef Patron. Chef Andri has built a team, dedicated to present a modern Latin American inspired culinary experience to Jakarta’s diners.

Carbón highlights the best ingredients from the land and the sea, which includes using Mexican heirloom single origin corn, a variety of Peruvian Aji and copious types of Mexican chillies. Latin American cuisine is colorful, often spicy, and has a well layered flavor profile that is familiar to the Indonesian cuisine. For Latin American cuisine, grilling in open fire is a way of life, inspired by the cross cultural dishes and culinary traditions, especially when eating juicy cuts of meat. Rounding out each meal are Latin-influenced desserts including Tarta de Piña (woodfired pineapple tart) and Chuddos (churros x donuts).

As guests enter the venue, Carbón welcomes them with an infused tequila counter – truly a one of a kind if not the only one in town. Sporting a fully stocked bar with an expansive tequila and cocktail list, top-shelf spirits, wine, Carbón also serves their very own tropical IPA beer.

The interior design invites guests to imagine a post-apocalyptic, steampunk mash vibe which they call “Post Apocalyptic Adventure Shack”. This concept generally conveys the idea of invoking a sense of adventure when guests enter the space with its chargrilled wall panels, the Amazon river formed by floating charcoals, the cracked walls, the fossilized wood texture, the lava oriented wall panels, steampunk themed sculptures, and last but not least: the Grill. All these components are mashed up in a single room so that guests can feel the excitement once they enter the area, while being tantalized by the smell of burnt wood, fire action, and the visuals of the space.
