Working with The House of Suntory, the bar explores Japanese craft through drinks that move between two moods: POP, lively and expressive, and CITY, refined and elegant. Each cocktail is built with familiar Japanese ingredients such as yuzu, hojicha, and dashi, creating flavors that balance energy with ease.
The POP list draws inspiration from Japan’s music scene. The Strawberry Love Punch blends Roku Gin with strawberry, basil, and sherry, echoing the soft nostalgia of Japanese pop ballads. The Nu‑Paper Plane adds Sansho pepper to Maker’s Mark Bourbon, a spiced take on a modern classic shaped by Tokyo’s Nu‑Jazz rhythm. The HØJ1CHA €SPR€$$Ø MART1N1 combines Haku Vodka, hojicha, coffee, and mezcal, a darker mix that carries the pulse of Japanese techno.
The CITY list reflects Japanese design, where detail and restraint meet. The Pop City Sour layers Hibiki Harmony Whisky with sour plum and purple shiso‑infused Cocchi Americano, a drink that mirrors the bar’s own identity. The Mikan French 75 brightens the classic with Roku Gin, mikan, and sparkling sake, while the Sakura Bamboo pairs Roku Sakura Gin and bamboo‑leaf infused Haku Vodka with sakura vermouth, a delicate study in cocktail craft.
Beyond the core menu, POP CITY X PONY introduces Seasons in Motion, a rotating series of drinks inspired by Japan’s 24 solar terms. Two cocktails are created each month, shaped by seasonal produce and the rhythm of nature. The first edition features the Fuji Apple & Oyster Leaf Fizz, designed for the heavy snow season, and the Shiitake Mushroom Negroni, made for the winter solstice.

Alongside the cocktails, POP CITY serves Japanese‑inspired bites. The Mochi Cheese Nuggets with Miso Curry Sauce offer a crisp exterior with molten cheese inside, layered with the flavor of curry. The Uni and Corn Croquette with Sea Urchin Butter Sauce brings a burst of umami, combining texture and richness in each bite.
Spaces Inside POP CITY X PONY
POP CITY X PONY unfolds across four distinct areas, each with its own atmosphere. The Byōbu Bar is anchored by a hand‑painted folding screen that depicts Japan’s 24 seasons, catching light and movement in ways that shift with the room. The Tasting Commons is open and convivial, lined with vintage Japanese vinyl and a central counter of whiskies that on some nights transforms into a DJ stage.
Bar Mixtape captures the intimacy of Tokyo’s pocket bars, with only a few seats and shelves of whiskies and CDs, inviting guests to listen to music while enjoying their drinks. The After Hours Salon offers a quieter corner for conversation and nightcaps, with zaisu‑inspired seating, kimono‑fabric textiles, and ichimatsu wall coverings creating a warm and adaptable setting.
