Cecina de León is an artisanal Spanish smoked beef ham widely considered the best. The beef curiosity is produced by Bodega El Capricho, owned by renowned chef José Gordón and has been prepared the same traditional way for thousands of years.
El Capricho only uses selected hindquarters of mature native oxen up to 16 years old, which roam freely on the pristine grazelands of Jiménez de Jamuz, León. The beef is first dry aged for sometimes over 200 days, then salted, washed, and smoked using oak found in local forests, which gives it a characteristic taste and aroma. The beef is cured for over 4 years within the cellar curated by José Gordón himself before it enters the market.
At Le Quartier, we are dedicated to bringing the best, iconic specialties to our guests. The Cecina de León can be tasted simply thinly sliced and drizzled with olive oil orcan be enjoyed as an appetizer served on top of warmed potatoes, smoked paprika butter, cornichons, and pickled onions.
To achieve the best tasting experience, guests are suggested to enjoy the meal with a full-bodied wine like Cabernet Sauvignon. It is also perfect to be paired with brandy.
