After a few rainy days, Bali has graciously shown the beauty of its blue sky and warm breeze of fresh air, the perfect time to immerse oneself in a pleasant moment surrounded by sweets.
Kanvaz Pâtisserie by Vincent Nigita offers the best in Parisian pastries, viennoiserie, artistic sweets, and artisan confections with a hint of Indonesian culture, mixed with some tropical fruit that are refreshing and sweet. Providing a wide variety of cakes, pastries, croissants, chocolate, and other goodies that one may indulge in while dining in the elegant café or the tea room’s cozy setting. In addition to traditional sweets, guests can also enjoy their savory selection which is available all day long.
When I arrived, the aroma of freshly baked croissants and pastries greeted me. I’m reminded of Paris by the setting and elegance. The striking blue monotone color that permeates the entire establishment transports guests on an extraordinary journey where time stands still and provides the most pleasing possible display of the pastries and desserts.
From the facade through the interior, teal colors delight the eye, not to mention the colorful shelf offerings of a wide range of homemade sweets such as jams, chocolate, cookies, and many more. While on the left corner, the pastries displayed just as colorful and wonderful as the place’s decor. Some classic viennoiseries include a wide variety of croissants, pain au chocolat, kouign amann, and their ever-famous colorful pastry selection.
If we are talking about Vincent Nigita, his name has soared high as one of the famous pastry chefs in Bali. His sweet creations at Kanvaz Pâtisserie perfectly showcased his exceptional skill as a pastry chef. The colorful and charming pâtisserie has swarmed all over social media. Influencers all over the cities outside Bali sing only high praises about this place.

While I was at this oasis of all things sweet, I believe it was the perfect time to spoil myself with several sweet indulgences – that and the fact that everything looked so tempting that it took me a bit of time to choose. Too many choices and just a little bit of stomach space left.
Many of Vincent’s creations are inspired by his past travels; for instance, the Japanese Fan, like its name, resembles the Uchiwa, or a traditional Japanese fan. The eye-catching dessert is not to be missed and is definitely one of my personal favorites. This pinky and pretty dessert combines vanilla and raspberry marble sabayon with shortbread, raspberry jam on the inside, and creamy napoleon vanilla cream, and a heap of fresh raspberry on top. A tantalizing mixture of sweet, acidity from the raspberry, and the crunchy texture from the shortbread – like the country which inspired it, this pastry is an adventure full of flavor and texture. This one is definitely the perfect choice if you want to spoil yourself. Delicate yet full of flavor in every bite.
If you prefer something with deeper flavors, another selection deemed as everyone’s favorite, is the Saint-Honore. Vanilla mascarpone chantilly, with salted caramel choux, dulce, caramel mousse, and puff pastry. This is an indulgence that will melt your worries away; the soft and decadent texture just fills my mouth with delight. The perfect combination of silky caramel – sweet and salty at the same time.
Now for those who want to keep it simple, you could try their viennoiserie selection: our must-tries include the kouign amann, the butter croissant or the pan au chocolat. Chef Vincent’s secret technique guarantees a sufficient glossy sheen, endless honeycomb layers, the permeating taste of French butter and the crispiness and flakiness you expect from a Paris viennoiserie. Sounds yummy right?
