Pius Hadimore Ebang, also familiarly called Bang Bewok, is the Head Mixologist of KAUM Restaurant. He is famously known for his ingenious cocktails creations.
Highlighting the richness of Indonesian culture and food, through KAUM Jakarta, Pius succesfully presents a range of cocktails inspired by Indonesian alcoholic beverages from various regions in Indonesia. Each cocktail is made using traditional ingredients commonly used in their respective areas, thus presenting a different taste.
Hi! Can you tell us a little about yourself and your daily activities?
Hello, I’m Pius Hadimore Ebang! Currently, I am working as the Head Mixologist of Kaum Jakarta. My daily activity includes taking care of day-to-day bar operations in Kaum Jakarta and researching development for our Indonesian-themed cocktails.
How would you describe your food preferences?
It’s usually home cooking, especially the food my mother used to cook back home in Kupang. Growing up in Kupang, I ate a lot of fresh seafood from the sea near my hometown. The food is usually cooked very simply, with local ingredients such as tamarind and belimbing wuluh.
What usually attracts you to visit a place to eat?
It usually comes back to the menu. What usually attracts me is if the menu gives a variety of comfort food.
Which restaurants have you visited recently and managed to impress you?
Tinoor, it’s the first Manadonese restaurant in Jakarta. It brings back memories from back home. The food is similar to what I ate back home.
Do you have a regular place where you always hang out with friends, or maybe for a special occasion with your family?
I usually go to Gultik at Blok M to hang out with my friends. I finish my service quite late every day, and they’re the ones that are still open and taste good.
What are your favorite classic drinks?
Cuba Libre or rum coke is my favorite classic cocktail. It’s so easy to make, just combine good quality rum and coke, but you need to have a specific ratio to have the best Cuba Libre.

Which drink concoction do you think is the most unique? Where did you try it?
White Negroni at Room4Dessert, Ubud by Chef Will Goldfarb. It’s completely different from the classic Negroni.

Are there foods you can eat every day without getting bored?
I can eat fried fish every day. It’s usually red snapper or marlin with rice and boiled. baby chayote
After a busy day, what drink do you choose to relax?
After a long day, I usually make Susu Jahe at home cause I think it’s one of the best drinks to relax after work
