Serving Southern American delicacies with an innovative local twist, The Bird Southern Table & Bar offers a uniquely American dining experience.
In 2017, James Beard Award-nominated F&B group 50 Eggs established its first foothold outside of the United States by opening The Bird Southern Table & Bar at Marina Bay Sands. With a singular objective of bringing the best of American culture and cuisine to Singapore in a casual and inviting atmosphere overlooking the arresting Marina Bay waters, diners are tempted to enjoy classic Southern American dishes, which, according to founder John Kunkel, is “historically a melting pot of a multitude of outside influences, including Creole, French, and even African, all culminating into one uniformed identity.” Kunkel also added that “what we do at The Bird is no different. We have a lot of creative influences and we are bringing the classics known and loved by a lot of people and add our own unique twists to it in order to appeal to the local trend and tastes.”
Some of the signature dishes that best reflect the modern Southern American culinary identity include the most popular Lewellyn’s Fine Fried Chicken made based on a 100-year-old recipe, Chicken ‘N’ Watermelon ‘N’ Waffles, Shrimp ‘N’ Grits, Buttermilk Biscuits, Low Country Crab Cake Egg Benedicts, Muffuletta Salad, and Southern BBQ Shrimp. “We’re always inspired by the flavors around us, and Singapore has an amazing palate; everything in the city is done well. We are not trying to recreate any of that, but we are bringing our own food, and while it is true that you’ll find some crossover with spices and taste profiles familiar with both cultures, we really just wanted to showcase our food and give Singapore a taste of American cuisine,” Kunkel elaborated further on the culinary offering of The Bird inspired by his own journey to Singapore.
In addition to fine Southern American food, Bourbon is another cultural highlight that The Bird is also bringing. Boasting to have one of Asia’s most impressive selections of bourbon and many sought-after spirits from around the globe, guests will discover rare favorites such as Pappy Van Winkle, Jefferson’s Aged at Sea and rare expressions of Blanton’samong the multitude of signature bourbon options. Cocktail enthusiasts will also be overjoyed to know that The Bird serves a wide variety of Bourbon-based concoctions to delight after one of those long Singaporean work days. Notable mentions include Grandads Cough Medicine with a base of Old Grand-Dad bourbon whiskey, and the iconic Sloe Plum Shrubble, eye-catchingly served ice-cold red within a sterilized light bulb glass.
The two-story restaurant offers two levels of expansive dining spaces. On the lower level, guests can experience a lively setting that sits 120 guests, including a private room that can be configured into two rooms for 6 to 10 guests each, a 30-seater semi-private dining room and an exclusive 12-seater bourbon bar. Upstairs, a vibrant dining space looking out to the waterfront promenade can host more than 80 guests, including alfresco seating. Guests can enjoy a tipple or two after-hours while taking in stunning views of the Marina Bay cityscape.
Designed to incorporate modern-rustic design with industrial touches, The Bird uses familiar textures and colors signature to 50 Eggs’ flagship locations, including accents of reclaimed wood, recycled machinery parts, and mason jars, while incorporating additional greenery and live plants unique to the cultural roots of the signature Singapore gardens.
