Chef Sun Kim at Raffles Jakarta
Expect an explosion of contemporary Asian-Western culinary magic by Michelin-starred Chef Sun Kim of Meta Singapore, coming to you soon at Arts Café by Raffles Jakarta.
Gourmands and foodies of Jakarta will be well-served in keeping their calendars open for the 19th and 20th October, during which Arts Café by Raffles is set to host Sun Kim, Head Chef of the highly acclaimed Meta Singapore. Over two days, diners are invited to partake in an exclusive dinner menu masterminded by the enigmatic culinary whiz.
Coming from a family of restaurateurs, Chef Sun Kim’s culinary journey began in his native Korea, where he spent his childhood in the kitchen of his family’s restaurant surrounded by delicious scents and tastes. While he worked at Italian restaurants after his schooling years, it was a serendipitous encounter with a cookbook by Chef Tetsuya Wakuda that inspired him to move across the Pacific to study cooking in Le Cordon Bleu Sydney. After honing his skills and expanding his culinary knowledge at the prestigious institution, Chef Sun Kim went on to work in Michelin-starred kitchens in Australia (Tetsuya’s Restaurant) and Singapore (Waku Ghin at Marina Bay Sands). In 2015, Chef Sun Kim took the biggest risk of his career by setting off to start Meta. While he struggled initially to define the restaurant’s culinary direction, it was through the inspiration of his fond childhood memories of Korean comfort food that he paved the way for Meta’s French-inspired Asian classics. In 2017, Chef Sun Kim’s decision to strike out on his own was rewarded with a well-deserved Michelin star, establishing the restaurant’s status as one of the island’s finest dining establishments.
The six-course degustation dinner at Arts Café by Raffles is set to be a feast of contemporary Asian food inspired by classic French techniques. Aside from a mesmerizing harmony of Asian-Western flavors, expect an aesthetically pleasing, point perfect presentation befitting of Chef Sun Kim’s signature perfectionist style. Highlights include the chef’s famed masterpieces such as the scallop chawanmushi with clam cream topped with micro-dill and Osetra caviar and the 40-hour slow-cooked beef short ribs nestled on a shiitake mushroom puree accompanied by pickled shiitake mushrooms and buckwheat crisps.
