Korean-born/American-raised Akira Back traded his snowboard for a sushi chef’s knife in his 20s and has since launched a half-dozen-or-so world-class eateries, ranging from Yellowtail Japanese Restaurant & Lounge at the Bellagio Hotel in Las Vegas, DOSA in Seoul and an eponymous restaurant in New Delhi.
In Jakarta, Akira Back at MD Place has racked up laurels from the World Luxury Restaurant Awards for best Japanese cuisine and best luxury family restaurant. The restaurant also brought cutting-edge design to the capital. Local designers from Metaphor Interior chicly realized Akira Back, giving it an ambience that’s sleek, swank and dark, with a ceiling of undulating dark wood waves and black marbled floors, and a sense of space created by golden honeycomb dividers.
Chef Akira’s take on Japanese cuisine offers creative fusions, like the must-not-miss thin-sliced tuna pizza, with ponzu mayonnaise, truffle oil and micro-shiso; and a sous-vide Jidori chicken with teriyaki and truffled potato puree. Quirkily named signature rolls – Brother from Another Mother (unagi, anago tempura, foie gras, ponzu mayonnaise, and eel sauce) or Pop Rockin’ (spicy crab and lemon pop rocks) are fun as they are delicious.
