Chef Gilles, who honed his craft at Michelin-starred venues such as La Poele d’Or, Le Paris Restaurant, Chef Pierre Orsi and Taillevant before arriving in Jakarta, pioneered French cuisine in Indonesia and creatively improvises on quintessential Gallic flavors and recipes.
Amuz, which frequently hosts collaboration dinners with visiting Michelin-starred chefs a dynamic open kitchen, offers an excellent seasonal menu–a distinct challenge, given that the superiority of the restaurant’s offerings stem from Chef Gilles’ high standards for quality ingredients, whether imported or found in Indonesia.
