AS PART OF the Four Seasons Hotel Jakarta’s continued dedication to innovate and present only the highest culinary standards, Alto Restaurant and Bar hosted Michelin-starred chef Valentino Palmisano of Vespasia Restaurant at Palazzo Seneca, Norcia, Italy.
Chef Valentino Palmisano, a prolific foodsmith who cooks authentic Italian food following his personal philosophy of viewing ingredients as a means and not as an end, received his Michelin Star in November 2017 at the Vespasia Restaurant. Listed within the top 10 best Italian chefs abroad by ‘Arbiter’ magazine, Chef Palmisano is currently one of the most influential emissaries of Italian cuisine in Asia, with a signature cooking ideals that is authentic, creative and at the same time tradition-bound.
An interesting trait of Chef Palmisano is what initially fuelled his passion for cooking. “I became a chef because I like to eat and I find seeing the happiness in people’s faces when they enjoy my cooking to be extremely satisfying,” the chef explained. Chef Palmisano also believes that any kind of ingredients can be elevated with the right touches. “I really don’t have any particular preference to certain products, because I am always looking to find harmony in my dishes.”
Trained in the school of Alfonso Laccarino, Bruno Barbieri, Pino Lavarra and Oliver Glowig, he has worked with world-class professionals like Riccardo La Perna, Massimo Bottura, Domenico Lavarone and, Gaetano Trovato, devising a program of gourmet events of international appeal called ‘Dining with Valentino’.
Regarding his recent activities, Chef Palmisano explained, “I felt I needed to change, the challenge of Norcia has immediately conquered me. In the end I have the opportunity to give something back: for so many years I have fought the reputation of our country, honoring the prestige of Italian cuisine, which helped me a lot. I am now ready to put myself into a play for the moral redemption and rebirth of a land that has a lot to offer”.
Throughout 19 – 21 April 2018, Chef Palmisano offered a nine-course degustation menu giving both guests and locals visiting Alto Restaurant and Bar at Four Seasons Hotel Jakarta the opportunity to taste authentic Italian cuisine crafted with palatial harmony in mind.
The restaurant Vespasia is located in the Relais & Châteaux Palazzo Seneca, a noble palace dating back to the 1500s in the artistic heart of Norcia, a few steps from the main square of St. Benedict, between the Castle of Vignola and the convent of St. Francis. With lit candles, dimmed lights, and meticulous staff consistently checking that everything is perfect, the ambience at Vespasia is that of perfect opulence. In terms of culinary offering, the recipes you can taste at the “Vespasia” stand out for their elegance, refinement, tradition, creativity and real professional ethics, thanks to the protagonist of the restaurant – Chef Valentino Palmisano.
