Taking inspiration from the surrounding’s produce-rich environment, Executive Chef Mads Wolff makes the most out of fresh aromatic herbs and organic ingredients that make up Tree Bar’s unique Slow Food dining experience for the healthy at heart. After a fun day of exploring Bali or a playful evening on the dance floor, rejuvenate yourself with a healthy selection of raw and vegetarian cuisine and a range of fresh salads and finger foods.

Tree Bar’s distinctive cocktail concept, Balixology, infuses Bali’s traditional brews like arak liquor and other locally-sourced herbs and ingredients to create an endless variety of fresh cocktails. Drench your thirst in unique creations like the Ginger N Rose, which is presented in a unique Jakobsen cocktail glass and mixes lemon juice, ginger-infused arak Bali, fresh rosemary, and homemade ginger syrup.

Behind the bar stands a jolly arak enthusiast who never seems to run out of ideas in blending his favorite arak to make a number of interesting cocktails – Bar Manager Borty Jessika. Echoing the Hotel Indigo brand’s philosophy to integrate all that’s good from its surrounding area, Borty remarked, “I am inspired by what is around me, such as Bali’s own cultural cocktail, the arak, Balinese food, drinks, herbs, spices and fruits as well the ways of the Balinese.”

Part of the hotel’s opening team, Borty brought with him an enviable track record of working with some of the best mixologists around the world. “As a bartender, our job is not only making drinks, but the way we create them as well as how to entertain the guests just like an artist.”

Laklak Swizzle

Swizzle is a Carribean style of mixed drink, our variation was inspired by the Balinese dessert called Laklak.

INGREDIENTS:
Bacardi rum infused with pandan
Arak spice liqueur
Pineapple juice
Coconut nectar
Lime juice
Soda water

Kopi Sik Luh

A Twisted of the Espresso martini, mixed with Balinese spice and homemade milk foam. Inspired by Balinese men’s habit of asking for a cup of coffee from Balinese woman. Kopi sik luh literally means “a cup of coffee, please.”

Turmeric
Vanilla syrup
Chocolate bitters
Milk foam
