Sublime Creations: Chefs Philippe Girard, Gilles Marx and Stefu Santoso
Chefs Philippe Girard, Gilles Marx and Stefu Santoso join forces for a collaboration dinner titled East Meets West held at Amuz Gourmet Restaurant in Jakarta.
In working to present dishes that celebrate and represent the diversity in Jakarta, the three chefs worked together combining French and Indonesian flavors with French and Indonesian presentations.
“We choose the dishes together, trying to do French dishes with Indonesian taste and vice versa,” said chef Philippe, who is a culinary adviser and trainer for Elle & Vire Professionnel®.
Among the dishes presented in the dinner were Warm Oyster in Lemongrass-scented Balinese Shallot Relish; Pan-seared Foie Gras Dumpling with Petite Asian Salad and Kunci Lime Dressing; Pan-seared King Prawn with Asam Pade Bouillabaisse Style; Slow-cooked Beef Cheeks Curry with Coconut, Banana, Red Bean and Watercress Salad; and Mango Ginger Crème Brûlée with Black Sesame Microwave Sponge.
“We bounce ideas with each other, coming up with the dishes by matching the flavors and ingredients. In making the bouillabaisse, for example, we come up with the idea of Asam Pade which uses fennel and turmeric leave because we think those flavors are connected,” said Chef Stefu.
While the chefs were trying to represent the Western and Asian diversity, the dishes for the course leaned more as Asian flavors presented in Western and fine-dining way.
“We use Elle & Vire Butter® for the foaming sauce in the bouillabaisse and the Excellence Whipping Cream (35.1% fat) for the curry to add sweetness, for example,” said Philippe.
All in all, the collaboration turned out to be a precious experience for the chefs involved. “We don’t use a lot of herbs and spices in our dishes in Europe, it’s very interesting for me to find these local spices and learn about their characters and how they are used in dishes,” said Philippe.
“Hopefully, our fellow chefs who were among the guests would be inspired on how to work and create dishes with Asian herbs and spices,” Stefu added.
