In the modern culture of today’s world, the culinary profession has evolved into a respected art form. Jose Luis Gonzalez started his journey as a Chef working in a hotel and finished his culinary practice in the Michelin start restaurant Anda Mari, and obtained a position at Arzak, a world-renowned restaurant in San Sebastian. Moving forward, he transferred to El Bulli, the number one restaurant in the world at that time from Mugartiz, a legendary restaurant in Spain. After obtaining a position at Nerua restaurant at the Guggenheim Museum in Bilbao, Chef Chele started as Chef de Partie for meats and ending his 3-years journey with Nerua as Sous Chef for the fine dining and gastronomy restaurant. Following his journey at an independent restaurant, Chef Chele became the Chef de Cuisines of the luxury hotels Sofitel and Shangri-La on the Philippines, where his culinary skills were utilised to run multiple kitchens as well as increase the food quality on both establishments. Chef Chele is currently the owner and the culinary brain behind the sophisticated and modern dishes of Gallery VASK, VASK Tapas Room, and ArroZeria, all located in Phillipines that already gained multiple recognitions from Philippine Tatler, The World’s 50 Best Diners Discovery Series, as well as Esquire.
Chef Chele strives to find new ingredients, flavors and most importantly different ways to understand food. His travels around the world have helped him develop an awareness of common ingredients using the latest techniques with an innovative perspective. His desire for continuous education has inspired many ideas in which to highlight ingredients and techniques, while paying reverence to their cultural significance. These distinct characteristics find their way into the every dish he serves.
