KAUM Jakarta is a place for everyone craving for true Indonesian food experience. As part of their effort to explore the taste of Indonesia, they work together with local craft beer brewery from Bali, called Stark Beer.

With craft beer wave is steadily on a rise on global and national scale, KAUM Jakarta and Stark Beer surf on it by creating food pairing dinner on Saturday, October, 21st. Stark Beer prepared their best unique beers while KAUM Jakarta spent many nights to present the best pairing from their menu. “The process to find the best pairing was fun, the team at KAUM literally tried to pair each beer with all our menu before settling on the pairing,” said Lisa Virgiano , KAUM Brand Director.

After Bona Budhisurya as founder of Stark Beer explained about craft beer, then the 7-course dinner started. The atmosphere was very casual where each table busy digging down and discussing about each pairing.

There were two of my personal pairing favorites, the fried duck sambal mango with dark wheat beer and tempe bacem with wheat beer. The savory juicy duck meat with perfect crackling skin, combined with the sourness of sambal mango, locked by deep flavor of dark wheat beer. The other pairing was a surprise, because who would have thought that traditional dish like tempe bacem with dominant sweet flavor actually goes along together with beer, especially the wheat beer. It’s a combination that you just have to taste to believe.

Food lovers were treated to an evening of culinary indulgence on Saturday, 7 October at The Westin Resort Nusa Dua, Bali as four Master Chefs joined forces to conceptualize a dinner of flavor and flair. This curated dining event pleased palates with a vibrant four-course driven by local ingredients and a selection of corresponding wines.

Attracting more than 112 guests, the evening was an overwhelming success that brought together an interesting mix of guests including from Maybank cardholders, sponsors and media representatives. A parade of associates wearing white chef jackets extended a warm welcome to the diners as they proceed to the dinner venue, Nusantara Foyer after pre-dinner cocktail reception at The Lounge of the resort’s own Bali International Convention Centre (BICC).

Nusantara Foyer where the stage was set up with actual kitchen work station to emulate the heart of the house operation. Each dish was prepared by a team of more than 35 chefs in full view of diners with no room for error. This was accompanied by an interactive commentary from the four Master Chefs during the plating process.

Former MasterChef Australia 2017 contestant Ben Bullock started the evening with an original vegetarian entrée; Bedugul Beetroot, Labnenh, Toasted Walnut paired with Rawson’s Retreat Semillon Sauvignon Blanc, Australia. Ben is actually a lawyer and cooks as a creative outlet. He is currently passing through Bali on a Hunter motorbike as he films a travel documentary entitled From Perth to Perth. This is the first leg of a very personal journey that involves riding, tasting and cooking regional cuisine. During the evening. Ben used this platform by giving a brief presentation about his mission to raise awareness about depression and suicide prevention.

The second course was created by Chef Juna who is a respected restaurateur known for his stints on MasterChef Indonesia and Hell’s Kitchen Indonesia. For this one-off dinner, he served up a flavorful seafood dish of Red Snapper, Three Cheeses, Torched Vegetables, Saffron-Lemongrass Sauce paired with Rawson’s Retreat Chardonnay, Australia. This perfectly articulated dish simply reinforced Chef Juna’s signature style of culinary diversity that is eclectic yet fully committed to quality.

The Westin Resort Nusa Dua, Bali’s very own Italian Chef de Cuisine, Alessandro Molini was responsible for the third dish of the evening. He chose to hero meat with his Cornish Hen Betutu Style Ballotine, Balinese Ground Provisions, Rempeyek Crumble paired with Rawson’s Retreat Merlot, Australia. This played to his strength of letting the natural flavors of some of the island’s best ingredients shine.

Ben Ungermann, the popular runner-up of MasterChef Australia 2017,ended the dinner on a high note by drawing inspiration from his Dutch/Indonesian heritage. He put a spicy twist on dessert with his Cardamom Coffee Ice Cream, Pumpkin Three Ways and Speculaas. During his recent stint on Australia’s favorite cooking competition, Ben consistently wowed judges with his innovative flavors and he is currently preparing to open his own ice cream parlor.

Generously sponsored by Maybank and Hunter Motorcycles Australia, this prestigious dining event included live entertainment and a lucky draw. There was also a spontaneous charity auction of a signed chefs jacket, which managed to raise USD 850. The proceeds of this initiative will be directed to Ben Bullock’s Perth to Perth charity as well as the resort’s own Corporate Social Responsibility program that supports Bali’s orphans at the Dana Punia school in Singaraja, north of Bali.
