NISHIMURA Presents a One-Night-Only Sake Pairing Dinner

Shangri-La Hotel, Jakarta presents a one-night-only special dinner menu featuring a variety of sake pairing, which will be perfect for those who like to be surprised on 29 September 2017.

Guests will be delighted with scrumptious Japanese dishes alongside an array of exquisite Japanese sake. Nishimura’s culinary team has specially curated a food menu to pair with the sake from beginning to end. The menu features a range of high-quality ingredients prepared in various Japanese cooking techniques.

The Sake Dinner Menu is as follows:


1. Appetiser / Zensai
Five kinds of appetisers
Sake pairing: Gekkeikan Nama Sake
The Gekkeikan Nama Sake has a fruity and well-rounded flavour that goes perfectly with a variety of foods. It is the perfect drink to open the appetite for the meal alongside five kinds of appetisers.


2. Sashimi
Fatty Tuna, Yellowtail, Snapper, Sweet Shrimp
Sake pairing: Ichidai, Sakura Misen
With its intense sourness, this sake has the perfect refreshing taste to pair with the selection of sashimi and ends in a sweet banana-to-peach-like note.


3. Boiled Dish
Lobster and Boiled Assorted Vegetables
Sake pairing: Hakutsuru Sayuri Nigori
This rare junmai nigori sake has the right balance between dry and smooth taste. Its
refined milky mouthfeel is an ideal pair for hot and boiled dishes such as this one.


4. Yakimono / Grilled Dish
Wagyu Beef Steak
Sake pairing: Takacho, Junmai Daiginjo (or Ozeki, Osakaya Chobei)
The Takacho is a premium sake made from the highest-grade sake rice, Yamada
Nishiki. The sake has carbon dioxide remains, which makes for the slight sparkling
notes at first taste. When it becomes flat, it will reveal the authentic fragrance that a
junmai-daiginjo sake is known to have.


5. Deep-Fried Dish (Tempura Sauce)
Deep-Fried Vegetables Fish Cake and Nori with Sauce
Sake pairing: Honjozo Karatamba
Posing as one of the flagship sakes from Ozeki, the Honjozo Karatamba has a wellrounded
taste that comes from the special care given by its brewer. This quality sake
presents unique notes of spice, which is ideal to spice up the tempura dishes.


6. Rice Dish
Assorted Sushi served with Miso Soup
Sake pairing: Tokubetsu Junmai Yamadanishiki
Tokobetsu-junmai is Japanese for “special junmai”. Just as its name suggests, this very
special sake is made from the highest-grade rice Yamada Nishiko. This quality rice,
which is the star component of this sake, is what makes this sake capable of having a
very pleasant medium body, yet still holding a nice round flavour. This special sake is
the right drink to pair with the specially crafted sushi.


7. Dessert
Red Bean Pudding with Fruits
Sake pairing: Hana Awaka, Sparkling Junmai
This sparkling junmai sake is just the right sake to end the meal. Its sweet-and-sour
crisp feel is perfect for cleansing the palate.
