Junk Food Creations: Seby

We invited two of our best friends and culinary creators, Lucky Suherman  and Sebastian “Seby” Subakti, to create junk-food-based dishes to lead you into the kitchen.

“I have a really close relationship with junk food. Especially when I was still juggling between doing shifts in a restaurant while finishing cooking school. My daily schedule consisted of going to class from early in the morning and then continuing with work from afternoon till closing time. When I got home, most of the time I was already too tired to fix a meal, so a bag of Doritos for dinner could happen from time to time.

“I eat the most amount of junk during card games with my friends. Every first Friday of the month is poker night for us, and everyone shows up with a ridiculous amount and variation of junk food to brag about. “My most favorite junk food would undoubtedly be Doritos Cool Ranch and Reese’s Peanut Butter Cups. Why? Doritos actually mix chips and dips in one bag, so it saves you the hassle of having to make an extra trip to the chiller to grab that bottle of ranch dressing. Reese’s  because I simply love peanut butter, especially with a little bit of chocolate mixed in it. No one does it better than the good guys at Reese.

I was actually planning to do a country fried chicken steak with Doritos Cool Ranch gravy, but that particular flavor is just nearly impossible to find here in Jakarta. It makes an appearance at some supermarkets from time to time, but sadly not this time around. I could only find the regular Nacho Cheese Doritos, so I stuck with it and flipped the game plan. I decided to make Doritos crumbs to coat the chicken instead. I used to do this a lot during my high school years cause it’s the easiest thing to do.”

Doritos-crusted country fried chicken with coke-glazed onion


2 medium-sized packs of Doritos

2 whole boneless chicken breasts

1 egg

1 large onion

¼ cup Coca Cola

1 tbs flour

550 ml milk

To taste oil for frying, onion, garlic and smoked ham for country gravy potatoes, butter and a little bit of milk for mashed potatoes




  • Put the Doritos chips in a blender and pulverize
  • Butterfly the chicken breast and cut right down the middle
  • Whisk egg and add a dash of milk
  • Dip the chicken in the egg mixture and coat evenly with the Doritos crumbs, then, fry on medium heat until the meat is thoroughly cooked


Country gravy

  • Finely chop onion, garlic and ham. Sauté in butter until fragrant
  • Mix in flour
  • Whisk in milk little by little to avoid any lumps


Coke-glazed onions

  • Slice the onions
  • Sauté in oil and add the coke
  • Stir continuously until the pan is deglazed and the onions are opaque
