As part of Cream of Europe campaign, a workshop was held at Podomoro University in Jakarta on Dec. 9, 2016, featuring Chef Gerald A. Maridet.
THE PARTICIPANTS OF the event are students of Pastry major of the university’s hospitality school. In the event, the student had the chance to learn how to use the best cream to create the dishes they usually work on.
“The event introduced the best creams in Europe. Our students have the chance to use the best ingredients as they learn how to make them, especially desserts,” said Dea Prasetyawati, Head of Hotel Business Program at Podomoro University.
Similar event was held for the first time in December 2015.
“The great chefs in Europe are very selective of the cream their using. Wrong cream will result in subpar taste. It’s really important to know what the quality are,” said Thomas Ardwiyanto, one of the participants.
Thomas is hopeful that after participating in the workshop he would be more knowledgeable on quality ingredients, especially those from Europe.
“Future chef, if you wanna be a good chef, you have to start with good ingredients,” Dea added.
CREAM OF EUROPE
The local branch of one of Melbourne’s best one of the best coffee shops and roasters has launched their new seasonal menu.
HEAD CHEF Gloria Susindra said that the Spring-Summer menu were lighter with more vegetables, fish and lamb. “It’s healthier for that summer body,” Gloria said with a laugh.
According to her, more and more Jakartans were seeking food with low fat, high protein and less processed ingredients. The menu will last until April before moving on to the next season.
More than a dozen dishes were added to the menu. Among the main highlights were Salmon & Beats (pan seared salmon, textures of beetroot, kali, pomegranate, barley, baby leaves), The Daddy 2.0 (ham hock and seeded mustard terrine, poached eggs, hollandaise sauce on milk bun), Brisket and Eggs (slow braised Australian beef brisket, fried eggs, cippollini onion, cherry tomatoes, fried parsley, brisket jus), and Green Hummus Bowl (Garbanzo bean and spinach hummus, broccoli, asparagus, roasted baby carrots, grains and seed).
“The Daddy 2.0 is our breakfast burger. This one is a bit on the unhealthy side of the menu. More fat, but it’s good!” Gloria said. According to her the menu is 85 percent identical with the Melbourne’s headquarter.
Gloria added there were possibilities of adding or changing dishes throughout the season. “We’ll listen to customers comments, we’re definitely going to do adjustment if needed. However, so far, the new menu has been received well!”

Tien Chao wants to connect the past to the future by marrying traditional Chinese fare with contemporary style and local ingredients. But for Eric Lau, Tien Chao is more than just the food but also family reflection.
ERIC IS the Executive Chef in Tien Chao, a modern Chinese restaurant in Gran Melia Jakarta. As a Malaysian native, he has had strong connections to Asian especially Chinese cuisine since he started his career in a Prosperous Restaurant at Penang, Malaysia as a Chinese Sous Chef in 1996
“Asia has many traditions and specialty cooking method where each country’s has unique flavors and rich to explore more. Chinese cuisine itself is different depends on the culture and its country,” said Eric.
He shared that most vivid food memories of Chinese New Year come from family celebrations.
“For me and most of Chinese family, food is not the important thing to focus on. The most important thing is a family reunion.”
Eric’s creation for Tien Chao includes Peking duck and pitan chicken egg porridge. The dishes are not only a reinvention of Cantonese and Szechuan cuisines but also a wish on family relations.
He also created a selection of dim sum favorites such as shiu mai, hakaw, xiao long bao, scallop dumplings, chicken claw, char siew bao chicken, and many more. The most popular one is xiao long bao which is the steamed chicken bakpao with the thin slice that cover the steamed meat with its boiling.
To end the feast with friends and families, he suggested sweet desserts like mango pudding, coconut pudding, lemongrass jelly, durian tempura melon and sago.

InterContinental Jakarta MidPlaza held a Christmas Tree Lighting event in a gift-giving ceremony and program for children in need.
INTERCONTINENTAL Jakarta MidPlaza celebrated official launch of the festive season with its annual Christmas Tree Lighting Ceremony on Nov. 29, 2016.
A group of 40 children from Pondok Si Boncel were invited for its 10th “Christmas Tree Lighting”. Pondok Si Boncel provides a safe and nurturing home environment for children under the age of seven years.
The children, along with media partners and the hotel’s staff members, gathered together to watch the lighting of the Christmas tree. General Manager of InterContinental Jakarta MidPlaza, Hendrik Eising, shared about the importance of helping those in need in his opening speech.
Through its Christmas Giving Tree program the hotel’s Christmas tree was decorated with a collection of cards featuring the photos and Christmas wishes of children from Pondok Si Boncel. Over the coming weeks, guests were invited to choose a card and make an appropriate donation to ensure that every child receives a gift.
“Our Christmas Tree Lighting Ceremony is an important event on the hotel’s calendar. It is just one of many initiatives carried out under the banner of our ongoing Corporate Social Responsibility program. Christmas really is all about giving children a magical experience filled with happy memories,” Eising said.
Throughout the afternoon, the the children were entertained with lots of fun activities such as decorating their own Christmas treats, singing traditional Christmas carols with a children’s choir from Studio Ratu Makin and watching a storytelling performance by Tania Kathryne from Rumah Dongeng Pelangi.
