Electrifying bun shop Bao Ji is teaming up with clothing brand Ageless Galaxy for a one-of-a-kind project in the weeks of October and November themed “Low & Slow”.

SOUTH JAKARTA-BASED

Bao Ji crew has been running the joint with a do-what-you-love mentality. Ageless Galaxy, which is also based in Jakarta shares Bao Ji’s drive.

Bao Ji started their venture into the restaurant industry with Taco local about five years ago, with the squad serving up Asian fusion grub with eclectic influences that perfectly complement their main specialty, which is Taiwanese-style Bao.

All of the steamed buns in the shop are crafted passionately on a daily basis, while some of the fillings that go into these baos go through a process that took longer than a day before they’re ready to be stuffed into the buns.

On the other side of the collaboration, Ageless Galaxy produces outer space-inspired refined basics that is constantly striving to make its mark in the street wear game.

Through the similar mentality and passion for their crafts, Bao Ji and Ageless Galaxy decided to team up and collaborate on a project that will put an emphasis on the “Low & Slow” term, as both squads implement this method in order to create greatness that endures each and every day.

Bao Ji is already adapting the low and slow method, albeit minus the wood smoke step, in the daily preparation of their roast pork belly where the belly goes through long hours of braising and roasting in a low temperature before being ready for the char grill during service. For this “Low & Slow” collaboration though, Bao Ji is taking it a step further and will go all the way in going with the low and slow smoking barbecue technique.

A specially-built wood smoker will be used by the Bao Ji kitchen crew to smoke the pork belly and chicken thigh, which happen to be the protein choice for this collaboration, until they’re all tender and soaked with the goodness that only a slow burning quality wood can deliver.

For the steamed buns, the Bao Ji crew is altering their signature dough with a kuro goma mixture (black sesame) in order to mimic the color and texture of the moon. The aim is to create a moon-like bao that will fit into the Ageless Galaxy crew’s repertoire of outer space-inspired refined basics.

To go along with the Moon Bao, the Ageless Galaxy crew came up with a “Low & Slow’” t-shirt sporting the right mixture of East meets West graphics that perfectly portrays Bao Ji’s take on the Western Barbecue technic employment into their Asian repertoire.

Like the Moon Bao, the t-shirts were crafted with love and filled with a generous serving of attitude. So take a break from your routine rush, sit back and enjoy this collaboration!
