Fairmont Jakarta’s VIEW to Remember

The opulent Fairmont Jakarta houses some of Jakarta’s best restaurants. One of them, high up on the 22nd floor of the establishment, VIEW Restaurant & Bar represents Fairmont Jakarta’s most progressive dining scenes that intertwines different worlds with a touch of locality.

TAKING THE ADVANTAGE of height, telling its the clienteles ‘Everything tastes better up here’, VIEW is ready to appease even the most discerned diners in Jakarta. VIEW cleverly captures the momentum to present diners with some of the most exciting menu lineup – arguably unseen anywhere else in the city.


The restaurant showcases modern European cuisine with an Asian twist on its menu, as well as hand crafted cocktails of Southeast Asian influences. The creative fusion between the two worlds are personally crafted by Executive Chef Andrew Zarzosa, who himself has the firsthand opportunity working behind the kitchens of high-end establishments from The Bahamas, UAE, Malaysia, and also a stint at Alinea in Chicago.

The latest lineup from the menu utilizes many locally sourced finest ingredients, the cutting edge cooking techniques, and avant-garde presentations. From appetizers to desserts, there are ample choices to entertain the idea of a perfect dinner or alternatively, you can allow the chef himself to present the degustation menu of five or seven courses comprised of these beauties.

The journey starts from the wondrous Gift from the Sea as the amuse bouche. The tuna tartare is wrapped in dried watermelon, topped with avocado, and served on a unique hand-shaped plate. Alongside, you will also be served with foie gras rempeyek (one type of Indonesian crackers usually fried with nuts and anchovies), and oxtail potato cylinders.


The Dry Aged Beef Tartare is a commendable option to start the dinner as it utilizes local herbs such as daun kenikir and puffed mustard with nasturtium to make it more appealing. The Torch Ginger with Cured Amber Jack is a surprisingly delightful opener as well. The juicy amber jack blends itself nicely with coconut and avocado purée. The highlight of this part would be the Vegetable Various Ways. Beautifully plated yet rich with colors and textures, this dish features ever-changing composition of local and seasonal vegetables.

Heading for the main courses, it’s a torn in-between moment to choose between the Wagyu Beef Sirloin served with king trumpet mushroom, lemongrass sweet corn, and kale; Beef Short Ribs with Indonesian touch using heritage rice, kaffir lime foam, kecap manis, and garden flowers with element of dabu-dabu ingredients; or the Japanese Suzuki – seabass with shellfish custard, cauliflower and hibiscus.

End it with a sweet note by indulging yourself with options such as Stone Roses – vanilla crémeux, rose and lychee; or Under Pressure – cantaloupe soup with yogurt sorbet; or many more.

The intense labor done by Chef Andrew Zarzosa and his team certainly pays off. By pushing their creativity over the limit makes what said on the tagline came to a realization. It certainly tastes better up here.
